Our
beef
heard
consists
of
Aberdeen
Angus,
Limousin,
and
Hereford
bullocks.
These
breeds
are
considered
to
be
some
of
the
finest
prime
animals
producing
the
most
wonderfully
tasting
beef.
Our
animals
are
free
to
roam
across
the
farm
grazing
fields
sown
with
a
variety
of
grasses
and
clover.
We
undertake
a
process
of
hanging
and
then
dry
ageing
the
beef
for
up
to
32
days.
This
extended
process
intensifies
the
flavour
of
the
meat
which
along
with
the
natural
marbling
found
throughout
our
heard
produces
what we think is the very best beef.
As
a
low
volume
producer
we
have
been
able
to
take
the
time
to
develop
this
process
from
calf
to
steer
which
all
contributes
to
the
delicious rich flavour of Belmont Beef.
We
raise
them
for
30
months,
by
which
time
they
are
ready
for
slaughter
and
are
hung
for
at
least
28
days
allowing
the
meat
time
to
develop
and
mature.
This
is
prime
grass
fed
stock;
we
cannot
rush
matters!
This
produces
the
most
wonderful
succulent
steaks
and roasts.
